Grilled Zucchini with Parmesan and Herbs

Using your favorite summer produce, this summer squash recipe makes for a perfect appetizer, snack, or entrée as you celebrate with your friends and loved ones on the Fourth of July. Zucchini is packed with vitamin A, vitamin C, and potassium and is a common choice for those living with irritable bowel disease, particularly if you choose to peel the zucchini. This recipe takes little preparation, is easy to throw on the grill, and provides a healthy and delicious alternative to many of the traditional Fourth of July snack foods.

Grilled Caesar Salad
